Spaghetti Squash with Butter, Garlic, Onions and Cheese

Cook your spaghetti squash in the oven, you don’t need to slice it in half yet.  Pierce the squash several times with a sharp knife.  Put it in the oven at about an hour in the oven at 375 F.  No microwaving!  Do this first before making the sauce.

When it’s done take it out, cut in half (sideways) and remove seeds and pulp (it is HOT) and separate strands with a fork.  The seeds can be roasted like pumpkin seeds with some salt and oil, they are great. The important part is flaking it into strands with the fork tines, it makes spaghetti like strands.  Spaghetti Squash Vid.

Take a head of garlic and separate the cloves, about 12.  Use a large kitchen knife to mash the clove of garlic, that will separate the skin and allow you to peel it off, do that with all the cloves.

Chopping Garlic

Take an onion and chop it finely.  Put a half cut of butter in a pan and melt it.  Put the onions and the garlic in pan and cook on medium heat til they get soft, add a bit of white wine (optional) then reduce heat to low and cook about 30 minutes until they melt into the butter.  Add some parmesan cheese and you are set.

This recipie can serve 4 people, you an make less, the sauce part is up to you.  Make just a little at a time if you are only serving yourself.
